New Year's Eve Butt
Dave's Not Here
Posts: 99
Mr. Egg is all cleaned out, loaded up with lump, and ready to be fired up at daybreak Monday for my first all-day butt. It's a 8# beauty (99 cents/lb at Kroger today). However, the carnivores won't be consuming it until New Year's Eve and Day in the NC mountains. My question is, should I "pull" it after cooking tomorrow night or put it in the 'fridge whole and pull it after reheating the next day?[p]Hope Mr. Egg sleeps well in the cold tonight, he has a busy day tomorrow. Maybe I'll put a blanket over him.[p]It's vacation, so Sunday night beers,
Dave

Dave's Not Here,
Just my 2 cents here but I would pull it when it is done and then reheat covered in a slow 250º oven.

Dave's Not Here,[p]Pull it when your done. If you have a vacuum sealer, seal it and put it in the fridge. To reheat, place the bag in 180°F to 200°F water until warm enough to eat. Most, if not all, of the moisture and flavor will be retained.[p]Enjoy the cook and your eats; it's Sunday night pizza and beer here,

Thanks Puj and Drivr,
The donor just came off Mr. Egg at 199°, after 12 1/2 hours. Both are resting comfortably right now. I followed Elder's plan as close as possible, and a sneak taste said, "It's wonderful". The pull will happen shortly.
Thanks again, and thanks to everyone on this forum.
