Well, after seeing the posts earlier today, I saw them at Whole Foods and decided to splurge for dinner tonight... now what? How high of temp and if I add smoke, what kind of chips?

Be sure they are not already cooked. When I lived in Miami stone crab claws could not be sold unless they were precooked...we used to buy them and make up a mustard sauce, crack the claws & eat away.....

or dip them in melted butter with lemon -
Dang, splurging on a Tuesday night.....fabulous. Can't wait to see some pics.

I agree with Kim - they are most likely pre-cooked.
I like them best chilled and dipped in a remoulade or mustard sauce.
Search for the Joe's Stone Crab dipping sauce recipe if you don't have a favorite remoulade. -
They are cooked before they even take them off the boat. You can serve them cold, but I like them steamed. If you put them on the egg, be careful! They just need to be warmed up! Then put a towel over them and lightly tap with a hammer or the back of a crab cracker.
You are going to love them! Enjoy.

EAT THEM COLD! No smoke. Mustard sauce or clarified butter. If you want to do some eggin, add a bone-in rib eye or prime rib, Egged potato, and a veggie. Simple but nice! Enjoy. :woohoo:You must master temp, smoke, and time to achive moisture, taste, and texture! Visit www.bubbatim.com for BRISKET HELP
