Dry Aged Angus Strips

Today something Special Egged Dry Aged Strips for Dinner. A cupboard full of rubs and the choice was:

So it was blackening seasoning. My job is to cook so I ask do you want it blackened? Answer no,so ok no nuke temps,and no CI skillet. Dang Haven't gone nuclear in the egg with cast iron yet. They are too thin for TRex so 400 direct has been working for me. The Eggshot
