    I like to peel back the skin on poultry and put seasonings and/or herbs underneath. These quarters were on the pit for 2 hours +, and if you don't pin the skin in place it will shrink up during the cook.

    I noticed that your ABTs are done with 1/2 of the pepper. I have been using the whole pepper. Looks like yours with the 1/2 pepper would stay together better.

    Not sure about that, if you are careful when wrapping the bacon either the 1/2 or whole peppers are secure. You do need the thinnest bacon you can find. I do like the higher ratio of bacon to pepper on the 1/2 ones and I don't ever turn mine, which is handy if you are making a bunch of them. I let them cook a few minutes very raised direct, then just slip a foil heat barrier underneath for the rest of the cook.

    Spread those cook pics out a little several post!! All of them togeather is over stimulating me!! :laugh: Looks like ya'll did do some eating. Had to work this weekend but going to make up for it next few days off.

    No new equipment here. What really happened to me was, I got into a 7 or 8 week Photo Throwdown Contest on another forum. Each week was a different subject and we had 7 days to cook and submit 3 photographs. I was getting killed because I was only used to taking "pit shots" or demonstration shots for my site.

    Guys & gals that could shoot serving platter or plate shots were getting all the votes. So I tried a few different angles and lighting.....About halfway the contest I got a couple of firsts and then won the Final Ultimate Throwdown with a picture of old school ribs.

    One week, I tied for second or third with this beer bread I made on the Egg, I think it was my best shot of all (so you can see how tough the competition really was)

    All I can say is that your pictures have a world of difference now, a huge change. Congratulations on both the photography and the cooks.

    I agree with the bread shot, that magazine quality. I also like the steak shot too.

    Very nice indeed.
