Turkey Time - Few questions

1. 17 Lb Tom. Tent or not to tent? I don't want him too smokey.
2. I've got the bird in the V rack @ 300. Been in for 1 hour and already at 85 degrees? Too quick? Seems to be a lot of smoke.
3. Got a drip pan and hope to get drippings. Suggetions thanked.[p]Happy Holiday.[p]

    Everyone says 12-15 mins per pound as a guide. I suggest using 10 mins. per pound as a guide but let the thermometer tell you when it's ready.[p]I pulled mine yesterday at 160 and covered with foil; temp crept up and while still very good, it wasn't my best effort. Wasn't as moist as I'd like but thankfully I'd injected it heavily and there was plenty of moist, flavorful turkey for all. Everyone says I'm too hard on myself, so maybe it was good.
