Sasquatch Chicken?

My wife keeps asking me when I am going to try Sasquatch Chicken? So tonight, I tried Spatchcocked Chicken. I have done Beer Can Chicken twice before and I have to say Spatchcocked is easier, faster and tastes as good, if not better, than Beer Can Chicken. I used DP’s “Raising the Steak” and I liked it! It cooked at 350 for 50 minutes.
Here are a couple of pictures of my first Sasquatch Chicken. We served it with Sweet Potatos and Apple Sauce.

I cooked indirect until the thigh was 180. Should I cook longer, or direct?

i wouldnt cook longer but i do mine direct on a raised grid to get the skin a little more crisp.

180F is the max. I guess my fires have a bit more smoke.

That is tooooo funny! What's the head made of? Looks like a potato, carrot, but what are eyes and the comb made out of? I hate to be a copycat but I've got to do this for my grandaughters.

Haha. The eyes are radishes with stuffed olives in them. The comb was a piece of pepperoni folded in half and then trimmed, kind of similar to paper snowflakes. I can't believe you have grandkids! Rory refers to you as "that hot lady I sat next to". He ate his steak and potatoes with chop sticks tonight.

I sewed them in from the back with an industrial needle. It wasn't hard. i hope to make a chicken tarantula soon. :blink:
