I have checked out several sites on cooking ribs. I have two slabs of spares covered in mustard and a good rub. Most of the sites have times and temps for baby backs. I am thinking of doing 3 hours indirect at 275, 1 hr in foil at 275 than 1 hr direct at 275. Does this sound about right for 'spare' ribs?
Thanks for any advice
