Help--Mad Max Turkey Question

BHE1
Posts: 205
I am cooking a 19lb turkey today using the Mad Max recipe but have a question.
I will be setting the egg up for an indirect cook at 325*, however, my traditional turkey pan does not fit with this set up, can I just place the turkey on the rack with a throw away drip pan underneath to catch the drippings? It seems like this would be the same as having the bird in a pan on an elevated rack?? Lastly, I would place the drip pan on the egg's ceramic feet to create airflow underneath to help prevent the drippings form burning off too quickly.
Thanks for you help and advice.

yes, you can do it this way. ..couple of things though
1. the bird sitting exposed that way is likey to brown faster, so be prepared to 'tent' it earlier in the process to keep it from browning to quickly
2. make sure to keep some liquid in the pan (extra stock/apple juice/something) as it is likely to evaporate at a faster pace, leaving your dripping to burn and scorch
3. watch your internal bird temps as again, the bird being exposed like that, its likely to get done faster than expected ...
4. make sure your dome temp thermometer isn't making contact with the bird
otherwise, you should be fine. .
and remember. ... baste, baste, baste.. .. . -
I've used the disposaable pans. The only issue I had was sorching the drippings, even with the air gap. I solved this by nesting two disposables, and placing them on top of the ceramic feet. Ggives you a double gap.

good catch mike. .. i usually advice stack 2 or three disposables. .. gives about the same mass as my roasting pan. ..

Thank you for the quick responses. As always you help and advice is much appreciated. I will post pictures of the bird later today.
BTW Mad Max--the stock already has the house smelling great. -
Mad max...have you found any pans like the one that you use anywhere?
I am also going to do one of these soon as a trial run for T-day
