Speaking of rib roast...

I have two I got for $2.97 per pound. One is about 3.5 and the other 2.5. Would ya'll recommend about 20 min per pound at 350°? I figure I would pull one at 135° for med rare and the other about 140° for the unenlightened medium well folks.

I'd go for a little more contrast. 125 and 145. Won't be much diference at 5 degrees!

ravnhaus, 115 deg is med rare for me. Maybe it's the elevation (5280 ft).

Gotta go with Nature Boy here. Take mine off at about 125° and then let sit for about 15 - 20 minutes. Comes out rare to medium rare and is excellent.
