Last night at7:00pm I putt on a six and a half pound boston butt. Right after i put it on I struggled keeping the temp. down. It wanted to cook at 260-270. I was afraid of going to bed with temps that high, so I finally got temp to come down to 230, and I went to bed. usually I will not go to bed unless I haven't touched the daisy wheel for one hour and the dome temp has not moved. Last night I made one final adjustment, and thought ahhhhh he'll be ok. I got up at 1;30 he was at 190. I bumped daisy open a little, got back up at 4;15, he was at 200. I was up then for good anyway so I opened him up alittle, to 225 and that is where it has been every since. The internal temp of meat is 186. I am now going to raise the temp up to 250-260 and finish it off within the next hour or so. That will be 23hours of cooking with never opening the lid. cool. My record is 19 hours and 50 minutes. What a fine 'grills' we have.
