last year we used some dizzy pig on them and cooked them in the egg. They came out really good, my wife was just saying the other day how good they were. I think we used raging river and shakin the tree. I would have to look in a cook book to remember how to cook them. Pdub

I do them the same way I do my roasted nuts... mix with chili oil in a ziploc - add sugar if you want the hot/sweet taste... then roast at 400-450 for 10 min then mix and on for another 10 min.. take off and sprinkle salt and your fav Dizzy Pig rub... I use Red-Eye...

Pumpkin, Seeds, Roasted, Wise One
I did a bit more searching and revised the recipe as follows:Roasted Pumpkin Seeds Don't throw out the seeds when making Jack-O-Lanterns or cooking fresh pumpkins, they make great snacks that are rich in fiber as well as vitamins B and E. Kids especially love them. Purists will want only salt as a seasoning, but if you're feeling adventurous, experiment and have fun with seasoning blends.
INGREDIENTS:
1 1/2 cups pumpkin seeds
2 tsp melted butter or oil (olive oil or vegetable oil work well)
salt to taste
Options To Taste:
garlic powder
cayenne pepper
seasoning salt
Cajun seasoning blend
**********PREPARATION*********
1 Rinse pumpkin seeds. Use your fingers to remove all the pulp. Drain pumpkin seeds and discard pulp. Spread out on paper towels to dry overnight.
2 While it's O.K. to leave some strings and pulp on your seeds (it adds flavor), clean off any major chunks.
3 Preheat BGE to 300° F and set up for an indirect cook.
**********COOKING**********
1 Toss pumpkin seeds in a bowl with the melted butter or oil and seasonings of your choice.
2 Spread pumpkin seeds in a single layer in an aluminum pan lined with non-stick foil (unless you don't mind the cleanup).
3 Bake for about 45 minutes, stirring occasionally, until golden brown.
4 Cool pumpkin seeds before eating. Store in an airtight container at room temperature up to 3 months or refrigerate up to 1 year.
**********NOTES**********
1 If you like your toasted pumpkin seeds extra-salty, soak overnight in a solution of 1/4 cup salt to 2 cups of water. Dry an additional day, then proceed as above.
2 Pumpkin seeds are also known as pepitas.

And it is mightyfine. I think I ate a cup of your mixed nuts with coconut shavings at the after party.

I highly recommend butter over oil. I also toss mine in butter a second time during the roast. They get a richer flavor and are more crisp that way. Also, I like to leave a little pumpkin stuff on them for the added flavor. Do not rinse them or wipe off the goodness.
I season mine with a little popcorn salt (the fine grain works wonders), regular sugar, and a pinch of chili powder. Toss them in the seasoning halfway through the cook as well.
These are from last year, but it is almost time to do them again. I may buy an extra pumpkin just for the seeds. -

Try tossing them in melted butter and spices again halfway through the cook. World of difference - turns the shell into more like a salty candy coating.
To the pumpkin patch.... -
You pull off the egg and bring them back in?

Yup.
Cook about 20-30 minutes, then dump them into a big bowl with about 2-3 Tbsp melted butter and some more rub/spices. Give a stir/toss, then dump them back onto the egg for another 30 minutes or so. -
They were awesome - best I have done. Thinking about them now - I can't wait to try again.
