Recipe for the pork tacos with apple/onion mix???

Anyone have this recipe? Sampled this last weekend in Tucker. Was a real nice cubed lean pork taco with an even smaller cubed onion and apple mixture for on top. Oh, and the hot sauce was really nice as well. Any ideas/recipe appreciated....
