<p />Just got my new large egg last week and cooked the first meal saturday night. Got a 4 1/2 lb tenderloin butt. Used mustard, pepper, salt, lemon-pepper, seared at 650, 5 min side, took meat out and let temp drop to 350, then back in. Pulled off at when polder read 140 temp. All were impressed, very tender, much like prime rib. Not as "smoked" as I wanted but can't complain. Thanks for all the help and info. Jeff
