high temp cook with dutch oven

Unknown
edited November -0001 in EggHead Forum
I am going to attempt a high temp cook (600 degrees) in a dutch oven tomorrow. I have a whole duck I am going to put into dutch oven and cook it fast. I saw a chicken done this way last weekend in a pizza oven. My question is should I set it directly on the grate or should I go indirect. Thanks in advance for any help.

I would use the plate setter, feet up -- then the grid. This suspends the dutch oven in the heat, without such an intense hot spot on the bottom.

Definitely use the plate setter legs up and then the grate on top of it. If this is to high up to close your dome take out the grate and use something under the pot and set it right on the plate setter. If you have an extra set of feet these are perfect for this. you can still go with the hight heat and have the effect just not the hot spot on the base of the pot. and give everything plenty of time to preheat if you are going to the sear when you first put it in. and I would put a rack of some kind in the bottom of the pot to lift the duck up out of the grease that will be pooling. Sounds yummy post pics of how you set up and how it comes out. Julie
