advice on first plank grilled fish

I have a couple of Grouper filets that I want to cook tonight. I have always done fish direct at around 400. however, i just got some alder planks that i want to try out.

any suggestions on temp and approx time????

  • you can still do the 400 temp direct thing . make sure you soak the planks for 30 minutes or so and just cook until the fish is opaque.

    I've done, not like the pro's here, but for me, many salmon cooks. Low/slow (indirect), direct at 350+, and planked. All were good. Planked is indirect. Soak the plank at least 30min. The plank will impart some smoke to the cook, but mild. I like, as an indirect cook, the plank. But, you can get there, indirect with smoke, other ways. Salmon is a strong flavor and holds up to the smoke, other fish may not. The plank give a bit of a character to the fish. I want to try other fish, but, just love the salmon.

    We plank Salmon a lot and I do indirect and do not soak my planks. We do not get much grouper up here in Maine but looking forward to Fl this winter :)
