I recently brined a goose and covered it with bacon before smoking. It was very good. I used the brine recipe that Cat gave me which is posted in the recipe section of my web site. JCA

I would think a goose is fat enough without the bacon.

You are right, but it is a flavor thing not just a moisture thing, pork fat rules. You know layering the flavors.

Charles Head,
I was watching Two Fat Ladies the other night and they did a very interesting thing. They poured boiling water all over the Goose before cooking. It causes the skin to become very crisp while cooking despite the fat. They said it is a ancient Chinese cooking trick used on ducks and Geese.
