    BlueSmoke,
    UP! Keep your chin UP!

  • char buddy,[p]this could work out. When I hit Cleveland we should do a restaurant steak firs. Then we could spend the rest of the evening over beers and real steaks trying to figure out why anyone would do restaurant steaks in the first place - except for Luger's and a few others. [p]I also may have a way to get fresh steaks to my door. Let's talk over the holidays. I think I just figured out my xmas present.

    Tim M,
What great looking steaks. Imagine a full bodied Cabernet Sauvignon with them, (1997), or Rancho Zabaco Dry Creek Zinfandel, it would take your taste buds for a ride.
Tim, give me your recipe for the Pittsburg Steak, or anyone else's recipe and directions, my mouth is drooling!
    Thanks

The Chuckster,[p]You can get a MAPP gas torch at your local Lowes, Home Depot, ACE Hardware, or generally any hardware supply store. Lowes sells a package that has a bottle of MAPP gas with a one-click self lighting torch head for around $28. There are a couple choices of torch heads to choose from if you look around. Replacement bottles sell for about $7.50.

char buddy,[p]Cleveland also has a major lump distributor not far from the "Downtown" area. If finding lump is a problem in your town, you could stock up. The last time I bought, 40 lb. bags were $17.[p]K~G

    KennyG,
Thanks for the reply. Me, personally because of the seasonings of the Char Crust, and the heavy burn on the meat, would probably use a "Big" Cabernet, with lots of tannin, or possibly an Italian Barolo, which I have a fondness for, when I can buy them reasonably.
In my opinion, a lighter red, would notstand up or compliment the food.
    Thanks again!

  • KennyG,[p]You're makingCleveland sound like a BGE paradise. Good lump, prime steaks, the best thermocouplers. But their teams still suck.[p]

char buddy,[p]Hard to argue with you there although I predict that the Browns will make the first round of the playoffs (but no farther) in spite of themselves.[p]Many of us have learned to enjoy gourmet food (ceramic prepared of course) and fine spirits as a substitute for any kind of national championship.[p]Did I tell you about the world class dried chilis that we import from Mexico via Montana?[p]K~G

  • KennyG,[p]you're killing me. [p]BTW ever done a pepper steak with mixing those high grade chiles and those prime steaks?

    char buddy,
Not really, these gems need to be a feature unto themselves.
If you make the trip, I will include a fine bottle of homemade wine and mead.
