Sweet Potatoes

Mr.Toad is insisting that I post this idea on the forum. I tried this for Thanksgiving and it worked wonderfully.[p]After I put the turkey on to smoke I place my sweet potatoes around the edge of the egg and roasted them slowly, turning every thirty minutes or so. When they had browned nicely on the outside I pulled them off and let them set outside and completely cool. Now, I put the turkey on at 4:30 A.M. so it was FREEZING outside, those potatoes got cold quite quickly. Anyways, once they are cold the skins peel off very easily, no peeler needed. You'll find they taste best if the outer edge of the potato meat has just begun to caramelize. By roasting and smoking the yams they get an added tasty, robust, woody flavor. You can then use them in just about any recipe that calls for mashed sweet potato, or just slice on an angle layer in a pan and pour some butter and brown sugar over them to reheat just before serving. You'll find a much nicer falvor than if you simply baked them in the oven or boiled (oooo yuk) them on the stove. [p]Happy eating and Happy Holidays.

    twotenors, two questions? How long did they stay on (and what temp?)? Also, did you put them back on after they were peeled or was cooking in the jacket all that was needed? [OK, maybe that is three questions.][p]
  • Wise One,[p]Temp was appx. 200 and time i do not know. I cooked them until they were done by checking by a fork. Be careful not to let them burn. Cooking in the jacket was all that was needed. If you try this let us know what you think.[p]Twotennors
