Marinade chicken

Looking for a chicken breast marinade. Looking for somthing different.

  • Had this one last night (from the Smoke & Spice book by the Jamisons):

    For 8 chicken breast halves with bones & skin:
    2 cups olive oil
    1 cup lemon juice
    6-8 garlic cloves
    2 t salt
    1/4 cup chopped fresh oregano or 2 T dried

    * Mix the marinade ingredients in a blender till smoooooth.
    * Loosen skin on chicken then put into a non-reactive container or a plastic bag.
    * Pour marinade over chicken and let sit in the fridge for 4 - 8 hours (turn periodically if necessary to coat all sides of breast)
    * Remove chicken from marinade and let sit in room temp for 20 min prior to cooking.

    They recommend cooking the chicken at 200 - 225, but I like being able to eat the skin so I cooked closer to 300 deg and it turned out great.

    you might try the alabama white sauce for boneless/skinless breasts. simple ingredients and easy to make. just google Gibson alabama white suace and you'll find it.

    One note on the recipe, for convenience I substitute apple cider vinegar for vinegar and apple cider. cook breast direct and dip in sauce on back end of cook. I'll rub the breast prior to grilling with a spicy rub. T

    this sounds fantastic::::

    Marinade, Poultry, Mediterrean, Donna

    I did a spatchcock chicken for the first time and it was amazing! I did a Mediterranean Marinade


    2 cups olive oil,
    1 cup fresh lemon juice,
    2/3 cup red wine vinegar,
    3 Tbs chopped fresh oregano,
    a ton of garlic,
    salt and pepper.



    Butterfly the chicken and marinate for about 4 hours. Rinse, dry, coat with olive oil and Dizzy Pig Shakin' The Tree and an hour at 375. Fantastic! Threw some fresh corn in foil with butter in for the last 20 min. Perfect end to the weekend. Too bad I didn't take a picture...

    1-2 garlic cloves, minced
    2-3 tbsp. brown sugar
    1-2 tsp. lemon juice
    1-2 tbsp. oil

    In all honesty it can't get any easier than this...just soak them for 2 hours in a bag with zesty Italian salad dressing! Sometimes I'll smash them a bit, soak them and egg them at 450° for 4/4/1 and then serve on an onion bun. Actually a rather perky tasting sandwich! BTW the last 1 minute is to melt a slice of Havarti cheese.

    I have them soaking in the Italian dressing as we speak also a little red wine,fresh Garlic,Tarragon and basil.I will add some dizzy dust before I put them on the egg.

    Thbis is a good variation:

    Sauce, White, BBQ, Big Bob Gibson


    INGREDIENTS:
    1/2 cup Miracle Whip
    1/4 cup Apple Cidar Vinegar
    1/2 tsp prepared horseradish
    1/2 tsp salt
    1/2 tsp black pepper
    1/8 tsp cayenne pepper
    1 Tbs sugar
    1/2 tsp lemon juice
    2 Tbs apple cider




    Procedure:
    1 Combine all ingredients in bowl and mix well.

    This is my personal favorite:

    1 cup lightly packed chopped cilantro (or parsley if you prefer)
    3 to 5 cloves garlic, minced
    1 teaspoon salt
    1/2 teaspoon freshly ground pepper
    1/2 teaspoon chili pepper flakes
    2 tablespoons fresh oregano leaves
    2 tablespoons shallot or onion, minced
    3/4 cup vegetable or olive oil
    6 tablespoons balsamic vinegar
    4 tablespoons lemon juice
    1 teaspoon rosemary

    Marinate chicken overnight or longer for best results.
