    Luby's Resturant Turkey/Chicken Tetrazzini[p]12 ounces spaghetti
    1 1/2 teaspoon vegetable oil
    1/2 teaspoon salt
    1 1/2 Tablespoons butter
    1/4 cup chopped onion
    1 clove minced garlic
    2 cans (10 3/4 oz each) cream of mushroom soup
    (I use cream of chicken instead)
    1 cup chicken broth
    1 teaspoon season salt
    3 cups (12 ounces) shredded american cheese
    (I use sharp cheddar)
    4 cups diced turkey or chicken
    2 Tablespoons chopped fresh parsley OR 1 Tablespoon dried
    2 Tablespoons diced red bell pepper or pimento[p]1. Heat oven to 350 degrees[p]2. Cook spagetti according to package, adding oil and salt to cooking water. Drain.[p]3. In a large saucepan over medium heat, melt butter. Add onion and garlic. Cook, stirring occasionally, 2 minutes. Add soup, broth, seasoned salt, and 1 1/2 cups of cheese. Cook and stir until cheese melts and mixture is smooth. Add spaghetti and chicken. Mix well. Transfer to 2-quart baking dish. Cover with foil.[p]4. Bake for 30 minutes or until hot.[p]5. Remove foil. Sprinkle with remaining cheese. Continue baking until cheese melts. Sprinkle with parsley and bell pepper.[p]Serves 8

  • Spring Chicken,[p]Our family likes to slice the leftover turkey thin and put it in a bag with flour, salt and pepper. Shake and fry in oil. The smoke flavor along with the frying makes it taste totally different.
