Christmas Dinner

Well, Santa Claus in the malls so it must be time to be thinking about it.[p]We're having about fifteen for Christmas dinner and I'm thinking about some kind of beef. The price of prime rib will rule that out, but am pretty much open to any other ideas.[p]Thanks,

    Got a few minutes before I head out, and was thinkin....[p]Another option would be some good Choice top sirloin steaks. Costco has them for 3.69/pound. A full inch and a half to 2 inches thick. Cook medium rare with a real nice sear and slice 1/4 slices against the grain and a arrange on a platter with a load of marinated/sauteed shrroms in the middle. Yowza.[p]Can't go wrong with a brisket either.

    <p />Harry:[p]As a kid in old Atlanta, we always had shrimp for Christmas. Typically it was fried, but grilled is my favorite way now days. Brushed with olive oil and sprinkled with a favorite rub, marinated Vietnamese style, any way you like on skewers and grilled. Scallops are nice too.[p]I realize the budget may not support either of these two choices, but there is always butterflied chicken or a mix of bird and one of the above.

    djm5x9,[p]Those scallops are my favorite! I did a bunch at the last Jets home game. Seasoned some with Raging River Rub and some with Prudhomes (sp) Seafood Magic. Parcooked the bacon for a couple of minutes in the microwave.[p]They came out very good, though not quite as pretty as yours. I was cooking them on this small Weber Smokey Joe at the Meadowlands and I let the bacon grease flame just a tad. Nothing was burnt, but it wasn't quite as pretty as those.[p]Later,

    Cornfed:[p]Next time pre-cook the bacon just a little longer, just don't let it get too stiff to handle.

    djm5x9,[p]Thanks. I wasn't sure how long to do the bacon. I think I was going two minutes and 30 seconds at 50% in my old and crappy microwave. Another issue is that I was showing them off to some friends while grilling them and had left the lid off for a while which I think gave me a little too much oxygen and encouraged some of the flames.[p]I'll probably do some more of these this Christmas. Also, I'm thinking of mixing in some proscuitto wrapped scallops with the ones wrapped in bacon.[p]Meat and fish - perfect together.
