Small Butts
Was interested in trying my hand for the first time with an overnight smoked butt, but couldn't find a 7-8 pounder, which is what I was looking for. I bought two 2.5 pounders and plan to cook them together. Can someone offer some tips on temperature and time? If I crank up the egg tomorrow early a.m. will I be in a position to dine early evening, or do I need to start tonight? Thanks much.[p]Proud New Egg Owner

Richmond Willy,[p]It is going to depend on how you cook them. Doing 2 won't be much, if any, different than doing one. I am 16hr into doing my 2 5lb'ers indirect at 225-260°. I have a 177° internal and so I am bumping it up to 275° on the dome temp to finish them off. I would guess you will need 7-8 hrs. You can always wrap them in foil and they will cook faster if you need to rush them. [p]Tim
