Q-BALL,
your looking at a 9 to 10 hour cook, I would suggest that you brine and use TenderQuick as part of the brine.
The shorter cook at higher temps I believe is the better way to go.

Why do you want to cook at 250 degrees?

If anything, low and slow is reported as producing rubbery skin. This year I'm going to try the Alton Brown 500/350 method of starting at 500 degrees for 30 minutes and then finish at 350 with a foil shield over the breast.[p]TNW
