Early Turkey Dinner.

I am thinking of lighting the large egg on Wednesday night at a low temp 220* because I will need to get up at 4.30/5.00am to put the 22lb Turkey on (my wife wants everything ready at noon)At least this way i don't have to worry about lighting the egg at below freezing temps and being to dark out that i can't see the egg :-)
The Turkey will be smoked at 325* using Pecan and Apple wood chips thx to kennyg. No brining this time around.[p]I am also doing a 6lb Prime Rib for the red meat lovers on the small egg. Will sear all sides at 550/600* then raise the Prime Rib on the extended grid with drip pan below and cook at 400* till i reach 145* (4/5 hours)No wood needed with this tender choice cut of meat.[p]Happy Thanksgiving and good eats to all.

  • Dublin, seeing that most of my cooks this time of the year are nocturnal I use a head lamp to see. I have a small 2 battery Panasonic for quick use (mostly summer time) and a Night Blaster (4 battery) mounted on a hard hat for lighting up my way. Last night I heard a rustling of leafs and turned to spot two deer about 100 foot away. Needless to say if that beam picked them up, you can imagine how well that works peering closely into Mr Egg!

    What time were you planning on putting your turkey on? I'm doing a 22 pound bird and even allowing 15 mins/pound, that's only a 5.5 hour cook. How long do you plan on cooking your bird?
    Guess my biggest concern is having enough lump in the egg to burn all night at a low temp, then increasing it in the morning to cooking temp and/or the low temp fire going out during the night and you having to start all over again. Have you tried this method before?

    Figure 6 hours cooking time tops.[p]I think if i have a low temp at 225* with a full load of lump it should be ok even when i up the temp to 325/350* my guess is i will still have lump left over. You asked what if the fire goes out, well it never went out on me before.(Hope you didn't jinx me)
    But you know what?I might chicken out (Or is that Turkey out) and just prep the egg Wednesday night, light it 5am next morning.[p]Anyone else out there having an early dinner??? When are you guys lighting up???[p]Dublin
