shoulder picnic verses butt

Either one works great. I actually prefer the picnic. I have found less pockets of fat in them. I usually take the time to take the skin off it so I can get more rub on the surface.[p]

bryant,[p]Picnic shoulder is an excellent substitute for boston butt. I just picked one up myself. I can not find boston butt near me, but picnic shoulder is regularly on sale for $0.99/lb at my local supermarket. And yes, cook it the same way. Enjoy.[p]Pout

Pout,[p]No butt???? It is one of the most popular cuts of pork...according to the Pork Council.[p]Maybe called something else? [p]Try blade roast or shoulder roast or shoulder blade roast.[p]
Ask the butcher for the top portion of the shoulder or point it out on the hog chart.[p]Stogie
