How to keep temperature

My husband, who is a great cook, will be cooking a brinned turkey in the BGE this year. He is unsure on how to control the temperature. Any suggestions? Thank you!

    Use the top daisy top - slide top closed and open daisy. Open bottom vent about 1-2 inches after the fire is going well. This should produce about 350°. Adjust the top daisy more or less to get the dome temp you want (use 325-350).[p]Tim
