Pickle a few pints; they're really good. Or, you could UPS them to me and I'll fry them.

greetings,
if you wrap them in newspaper(B&W no color ads) and place them in a cool dark place you can have fresh tomatoes from thanksgiving to christmas. check them weekly and any that aren't going to make it will be evident by the staining of the newsprint. when you want to use them just unwrap and sit on the counter for a week and they will color up.
good luck -
It was a lousy year for tomatos in Southern Illinois. I've got quite a few green ones to use up. Thanks, Tom

slice them into 1/4 inch slices, lay them out on cookie sheets, heavily salt both sides, put next sheet on top & repeat, put heavy weights on top of last sheet & let sit for 24 hours, drain, rince, dice, jar, add sliced garlic & hot peppers & top off with vinegar & let sit for 2 days or more, drain & press to get excess vinegar out, put whole mess back into jar & add/top off with olive oil, leave for a month or so on shelf, open, put on anything, outstanding:happy in the hut
