Trout experiment

I had a couple of trout filets, so I decided to experiment with something simple. I mixed a little balsamic vinegar with brown sugar to make a thick goo that would stick to the fish. I then sprinkled liberally with slightly toasted sliced almonds. I cooked at 350 for 30 minutes on a raised grid. I used a very large amount of alder chips for smoke. Oh, baby, I thought the fire engines would come. Damn! Thankfully my neighbors weren't home. Maybe power washing will get the smoke stains off their house... Turned out wonderfully. I was afraid the nuts might burn, but they turned nice brown color and the whole thing tasted great.[p]TNW
