Catfish & Huspuppies
Can some of you share your catfish and hushpuppies recipes?
My first time at grilling and frying catfish and my first attempt at making homemade hushpuppies.
For my sister's birthday so any help would be appreciated...for some reason she didn't want pulled pork butt, brisket and ribs this year from my egg :S

I did the beer battered (no onion or oil) and the flavor was very good. After battering I put them in thr fridge for 30 minutes plus to set up. Cooked indirect, dome 350 plus for about 25 minutes or so. They didn't brown quite as much as I would have liked, but still very good. There were 3 pieces just shy of 3 pounds.

Reading a post from a couple of days ago, the price you pay for lobster is a third of what it cost here in Houston. A 6 oz. tail is $15.00; whole lobsters go for $15 to $20 a pound. Prices have been up for the last year.LBGE Katy (Houston) TX

Ouch, yes cold water seafood is the best up here. It is funny we have it right here but only have it about 3 times a year. but going south and having a big platter of hot, crispy fried catfish and hush puppies.... I bet there are not three places you could order hush puppies up here or that they would even know what they are! LOL a small mom and pop tried to do them a few years back. and they were good. crispy and hot outside and soft and light inside. did them with haddock and slaw. Everyone wanted french fries so they stopped doing them. :huh: It is cool how diverse our country is and the foods that we crave from across the nation. One thing I look forward to when we hit Fl in the winter is the Conch cafe and a grouper rubin. makes my mouth water just typing it:) god I love to eat! there were rolls that Neil used to bring home to PA when he was working in Rochester, NY. 20 some years ago, they had coarse salt on them. I think of them a lot since we got the egg....rare roast beef... it is sad... LOL Julie

Catfish, lots of Cajun seasoning, and hot cast iron with botter for maybe 4 mins per side. You could dredge them in an egg batter and then panko before seasoning. good either way.
