Seems there might be some disbelief of 12 pound Prime Rib on my Medium last weekend. I did two 6 pounders side by side no the rib rack with inverted plate setter, NO grill (no grill gave me an extra couple inches depth for the roasts to fit), drip pan in plate setter, inverted rib rack in drip pan and two roasts side by side in the rib rack. Worked fine. Drippings looked like lava, but the Prime Rib was great. I've decided to do same thing with boneless Prime Rib this weekend that'll give me about 1/2 pound per person for the 23 people.
