great stuff ! throw them on a plate with refried beans, cheese, diced tomatoes, diced green onions, some jalapeno slices and nuke them or throw them on the egg till nice and warm and gooey. slather with a dollop of sour cream and let the games begin!

EggTucky,
I posted this awhile back and am confident I have NAILED the recipe from Germantown Commissary outside of Memphis. The pics won't show up, but the recipe will work:

Let me know if you have any questions.... -
I have never done nachos, but PP quesadillas are GREAT and the options are almost limitless with onions, mushrooms, dised tomato, avocado, chilis, etc.

Are you coming to eggtoberfest? One of my plans is bbq nachos. I like chicken but will probably do pork for cost and volume reasons. I can smoke it the day before and warm it up there (maybe that won't create too much ire)

nah..prolly wont make Eggtoberfest this time..my son is getting married just a couple weekends before that and the ol piggy bank is gonna be kinda tapped for a while

Well, I like to use leftover pulled pork. Start with a layer of chips, then add pork, scallions, jalapeno's, and cheese. I like rico's and I think that is what is used commercially a lot. Anyway, add a second layer of chips, pork, cheese and top with shredded cheese, sour cream and guacamole. Not sure you really need a recipe.

Yeah..wasnt looking for a 'recipe' buster..just more ideas of things I hadn't tried..for instance..I had not thought of scallions...thanks for the reply!
