Smoked trout

Oh, wow.....[p]Your recipes were to die for, and now I don't even feel guilty for taking home the only fish I've not released this year. That brined recipe made that trout taste like a (big) piece of heaven![p]Sorry, Gloria.... I couldn't leave the heads on the larger trout because I have the medium BGE, and neither would fit until I took both the heads and the tail fins off. Can't imagine either of the fish tasting any better than they do now, so thanks to all who responded.
