Almost fried catfish.

Added crab meat to the biscuits, much better.

Then dredged some catfish fillets in an egg and coat with a cajun fish mixture. (store bought) for the oven.

Note to self, use a preheated pan or the bottom is not crispy. :ohmy:

We did some Catfish last night in cast iron. We first dredged them in egg then Panko and then some homemade Cajun seasoning. About 3 mins per side in a very hot oiled (notevoo) pan. They came out freakin superb.
I didn't think they warranted a photo but they tasted great. -

Dang...just posted about some "almost fried" pork chops then I saw this. I guess almost anything can be "almost fried" with success...even the cook, as long as he's using the ever-forgiving BIG GREEN EGG.Owensboro, KY. First Eggin' 4/12/08. Large, small, 22" Blackstone and lotsa goodies.
