Request for suggestions...
I'm wanting to do a couple of butts for an away family gathering over the Turkey Day holiday...Whatever I do, I need to do the weekend before and it won't be served until Friday or Saturday after Thanksgiving...I'm thinking that 5-6 days is too long to keep fully cooked butt...[p]Can I maintain quality by smoking the butt approx 10 hours with smoke, remove from egg and cool/freeze and then finish it in the oven later in the week?...[p]Can I maintain quality by finishing the butt, pull it and then freeze it?...[p]Any and all suggestions are welcome and appreciated...

Finish it and pull it and freeze it. Then you'll have more time to mingle with the family instead of worrying about finishing the butt. Vacuum seal if you can. Ziploc freezer bag will be fine for a short duration. Reheating is darn near as good as fresh.

I'd recommend mixing a little bit of sauce and "snort"of apple juice into the pulled pork before freezing. Gallon size bags will hold 3 to 4 pounds, and reheat very well.

All great suggestions below, but I'd add just one thing:
Don't reheat the pork in the bags![p]I made that mistake once, and had about 2# of plastic flavored butt. :([p]It's not likely to be a problem with all brands of bags (this was a FoodSaver bag) but why chance it?[p]In general, I simply don't nuke plastic anymore...[p]Have fun!

If you use a foodsaver then give it one more try except instead of nuking, stick it in a pot of boiling water for 10 to 15 minutes. I've never had a problem with plastic taste or smell and it's almost as good as fresh pulled. [p]The microwaves have a tendency to actually push molecules from bags or paper plates into the food. Whenever I use the microwave I only reheat on ceramics materials.[p]Hope it works better for you,
