Other than a plate setter, is there another method for indirect cooking?, could I simply place an aluminuim pan on the firebox ring??

    Ssave yourself time, hassle, & aggravation, just buy the P Setter.
  • you can certainly use an alum pan to shield on a multi lever set up or extended grill set up. or simply use the pan on the grid with whatever you are cooking in it.
    maybe even a couple of fire bricks on the top of the fire ring and the pan setting on those under the grid.

    pizza stone, firebricks (cheap), pan, cheap tinfoil pans etc all work. i would buy a spider, adjustable rack and pizza stone and skip the platesetter, but i used cheap firebricks and a carbon steel paella pan for alot of years with no problem.

    Do a google on "Naked Whiz." The Whiz has a page about improvising with fire bricks (and lots of other useful tips.)

    I'm not sure if it would work with a brisket, but before I got a platesetter, grill extender, etc. I would build a pan around a roasting rack out of double or triple thick HD foil. Then I would put a little fluid in the "pan" and put the pan/rack assembly on the bottom grate. Then the meat on the rack. Worked passably well, but the fluid needed replacing every few hours.

  • I believe lump charcoal burns at a temp that could melt aluminum or at least cause it to warp. Platesetters are indispensable, I suggest you buy one.

    If you can't get a platesetter in time, cut or break a firebrick in to three pieces and put a cheap pizza stone on top. Don't use it for pizza but it will be alright at brisket temps.

  • I've been using a grate on top of the firebox and then the fire ring. The drip pan on the grate and the cooking grate on the fire ring. This setup works great. I've been considering a spider since it would be simpler to use.

    I do that sometimes if I want to use the meat drippngs. I set the drip pan on thin firebricks and the cooking grid on thick ones on edge. I wave the adjustable rig but I didn't know to order the inner rings separately. Have to do that sometime.
