Elk and Pheasant

A friend has some elk and pheasant that he wants me to cook on the egg. Does anyone have any suggestions on how to cook these. I'm not sure what cut of elk he has.[p]Thanks

    Wild game is low in fat so grilling is a great way to go.
    You will find that the elk is a real treat, very tasty, just don't over cook it. I use rubs and techniques that work on beef.

    PS: My wife has told that any time I want to go get another Elk it was ok with her. I wounder if she realizes that the average hunter gets one about every 13 years> :)

    Don,
    Brining a pheasant for 4-8 hours helps insure that it won't dry out, and it adds lots of flavor depending on the herbs and spices in the brine. We cook ours on a raised grill at 350. Enjoy.
