Just a couple. Pound it out flat, spread a pesto type mixture on it, roll it up and grill it.[p]OR, make a cilantro type pesto... lots of cilantro, garlic, onions, olive oil, Tequila and salt. marinade then grill.

Headhunter,[p]Skirt Steaks are a good Grilling item. We buy them unbutterflied, untrimmed. So we have a steak that is about an inch? thick. Right out of the butcher's reefer. Trim the hanging fat pieces off. Nothing more.[p]Marinade them in a teriyaki mixture for several hours or overnight, turning every couple of hours. Save marinade.[p]Grill over a hot fire, redunking the steak in the marinade mixture every few minutes... to keep from drying out. Grill to a medium rare or medium, but no more!!![p]Slice on the bias (about 30* from the horizontal), against the grain. Very flavorful, juicy steak. A real surprise for those who have never had Skirts. Better, by far, than Flank.[p]Sespe Pete
