Ratatouille

I searched the forum, only got four hits for Ratatouille maybe because like me I have no idea how to spell it. Took an eggplant sliced and quartered, a sliced a zucchini, sliced and halfed a large onion. Tried to skin a red pepper and sliced, tried to peal and core a large tomatoe addded a 1/4 cup of EVOO and some chopped fresh rosemary and 7 whole garlic cloves. Added some salt mixed it up and then roasted indirect at 375-400 on aluminum foil a little over and hour. Here it is added some chopped basil, asiagio cheese, salt, pepper. When I asked my wife what she thought, she said it hard to beat a plate of roasted veggies :)

    Looks good! Now your open confession causes me to admit I had never even heard of the dish until last year when a neighbor couple even older than us told us of the animated film by that same name. Rent it - even old farts like us will like it! I know!

    That looks delicious, particularly the olive oil glistening on the crusty bread, almost as if it's screaming out "put a roasted hot pepper on me"
