Deer bacon recipe
RRP
Posts: 26,020
A guy was telling me he makes deer bacon that he says makes pork bacon ho-hum stuff. I'm not sure I can get the recipe out of him (long story), but if I had one to trade him maybe I could. Any "ideers" for such? PS no he doesn't mean deer sausage but it is a slab and after cooking it, he slices it thin and then freezes it.

RRP,
use a nice flat piece of the roast, dry rub with a mix of curing salt(tender quick is fine) brown sugar, blk pepper, and some of your fav. rub mix, let it sit for 4-5 days and cold smoke, also after about 3 days drizzle with honey or maple syrup when you drain them off(alot of moisture wiil be pulled out. I'm at work right now so I don't have the exact proportions with me. Don't slice but freeze whole and slice it when you use it. Even better use boned out pork shoulder, you'll never buy bacon in the store again. E-mail me at langer0@aol.com and I'll see if I can dig up the proportions. That's a #0 not the letter o in my e-mail
