BB Ribs

Gonna do some baby backs in a day or two and here's my plan... Membrane removed, apply a generous coat of John Henry's pecan rub and then overnight in the fridge.
Into the Egg (250F) for 4-5 hours until they pass the "bend" test. Perhaps some Jack Daniel's, hickory, cherry or pecan chips in the fire and also an occassional spritz of 50/50 apple cider/juice. Any thoughts out there? I've Egged ribs before but always felt they could be better. Also, this will be my first time with the JH rub...

    Sounds like a plan to me! My best BBs (to date) were cooked about like that (though I don't have any of the JHP rub yet - I'm planning to pick some up this week). Post pics please!

    Thanks! I sure will! The only use for the JH pecan rub so far was when I made some bread sticks last week. Rolled a few of them in the rub before baking and they were Fantastic!!~~
  • I did 4 racks of BB this weekend. I changed a little after my last racks were a little dry.

    membrane removal, rub - then I cooked at 230 grid temp indirect for 4 hrs, then pulled and foiled w/qtr cup apple juice/worsteshire for 1 hr @250. Finished by unfoiling and spreading sauce and back on egg for 15 min. I used some apple wood chips in the first stage.

    I used my stoker to keep temp constant and acutally put a probe in the middle of the meat of one of the center ribs. Iit turns out I foiled at about 161 degrees and unfoiled at about 186 degrees..

    These were really good probably one of the best I have made. They were falling off the bone and weren't dry at all.

  • That's pretty much my formula. I still foil with apple cider vinegar during the 4th hour. During the 5th hour, I slather with 3/4 Sweet Baby Rays and 1/4 cheap clover honey, and only cook that in for about 25 minutes.
