Chicken cordon bleu questions

That recipe that YB posted looks good so I'm going to try it this weekend. Would a marinade be overkill on this recipe? Also, do you use any smoke or just go with lump only?[p]Any expert advise would be appreciated.[p]Have a great weekend,

WudEyeDoo,[p]YB sent me the recipe just in time for last weekend and it was dinner last Saturday nite. It was excellent just at it stands. I used no marinades and just a few apple chips.[p]K~G

I used only lump to cook with at Eggtoberfest.I think a little apple or pecan wood chips might give a nice touch.You might try the Jalepeno cream cheese instead of the roasted garlic if you like a little bite.Here is a picture of the set up I used.

I noticed in that picture you are checking the temp with your Thermapen. That is a great tool to have handy. I sure like mine. By the way, what internal temp were you shooting for? 170?

I had planned to cook this for dinner this week also, but I can't find the cream cheese. The kids don't like jalapeno, so that one is out. Do you have any suggestions on substitutes?[p]~nikki

I cook it to 165 and let it rest for a few minutes.

You could use just plain philadelphia creem cheese.Most stores has this and it's by the cheese and milk.Here is a picture of me putting the cream cheese on the chicken in Atlanta.

I Used pepper jack cheese and it was great. you could use any cheese you like. I cooked it with just the lump. No need for any thing else. Larry Has wonderful recipes.
