I'd like to do a batch from start to finish. Starting with dried beans and finishing in a cast iron dutch oven. Any suggestions. Thanks, FG.

  • this one is far from "scratch", but I promise you it'll be a hit. Not really necessary to cook them in a cast iron dutch oven, but they just look better served that way.

    Book: Gwennie's Cook Book
    Chapter: Side Dishes
    Calico Beans

    Makes 12 servings
Serve with fresh bakery bread and a salad. An easy make-ahead.

    1/2 lb diced bacon
    3 lbs ground beef
    1 1/2 cups Chopped onions
    1 1/2 cups brown sugar
3 sm cans lima or baby lima beans
    3 cans kidney beans
3 large cans pork and beans
    1 1/2 cups catsup
    3 tablespoons prepared mustard
    1 tablespoon salt
    6 tablespoons molasses

Brown bacon, onion and ground beef. Mix all ingredients into a large 3 quart casserole and bake for 1-1/2 to 2 hours in a 300* oven, (or) cook all day in a crockpot.
  • Check out some of the veterans web sites. Wess B, doctor BBQ has a nice easy one in his book, third Eye and the list goes on. Eggfests recipe books are another good source. personally have found that using bush's baked beans and adding my preferences seem to work real well and a lot less time consuming. Add some smoked brisket, pulled pork, bourbon and all of a sudden you have a meal. Bourbon 2 fingers in beans, 4 fingers over ice in glass and give to cook twice. the beans will be done at that time. gotta go a cook.

Keri's hog apple baked beans is my favorite, I substituted peach pie filling the last time I made these, based on someone's recomendations.
  • These are awesome - got it from a Paula Deen show. I left out the molasses because I thought it would be too sweet.

    4 (16-ounce) cans baked beans
1 (20-ounce) can crushed pineapple, drained
    1 cup molasses
    1 cup BBQ sauce
2 tablespoon yellow or brown mustard
    5 slices cooked bacon, crumbled
    1 (6-ounce) can french-fried onions, crushed
Salt and freshly ground black pepper

Preheat oven to 350 degrees F.
In large bowl, mix together beans, pineapple, molasses, BBQ sauce, mustard, bacon, and a third of the onions. Add some salt and pepper, to taste. Pour beans in 9 by 13-inch casserole dish and sprinkle remaining crushed onions and bacon on top. Cook in oven for 1 hour or until beans brown and bubble. Serve warm.

  • Americas test kitchen had a show on where they did ribs and beans on a weber. They used dry pinto beans. I am sure you can find a recipe there.
  • These are the ones we like.... vegetarian, but loved by all.... Recipe with step by step pictures is HERE

  • here's my recipe for baked beans. i've optimized it over about 50 cooks. i'm sure you could cook it in a dutch oven in the egg, but if you want to leave it uncovered to absorb some smoke flavor, you will need to keep an eye on it to make sure the beans are always covered with liquid. if they dry out, they will be tasty but as hard as pea gravel!

1 lb. navy beans (also called pea beans)
    1/3 cup molasses
    ¾ cup brown sugar
    ¼ cup ketchup
    5 shakes Worcester sauce
    4 tsp. dry mustard
    1 tsp. salt
    1 small onion, quartered
    ¼ lb. salt pork, quartered

Soak beans the night before. Drain water, then cover with water and parboil until the skins are starting to crack and the beans are “crunchy tender”.
Meanwhile, put all other ingredients into bean pot (or crock liner from a crock pot). Drain the parboiled beans, and add beans to pot. Cover all ingredients with boiling water and mix well.
Place cover on the pot and bake in 250 degree F oven for 8-10 hours. Check liquid level every few hours and add more boiling water as necessary.
