Prickly Pear BBQ Sauce

The prickly pear cactus fruits are ripe so I picked about three gallons of them.
Quartered them, covered with water, and simmered them for a few hours.
Strained out the the juice.
Then reduced the juice down to 1 cup and added seasonings and lemon juice to make a decent BBQ sauce. Kim makes jelly from these and I have brewed some really good beer with them. -RP

WOW between you and Zippy I'm gonna feel guilty going to the grocery store.

How do you know when they're ripe? I've seen huge cactus stands covered with those, and they just rot. I would appreciate some more info so I can harvest them. Thanks!
