I am trying some Cornish hens for dinner tonight -- anybody have advice? Spatchcocked or whole?

I like to do them spatchcocked high in the dome @ 350. Indirect skin down first and turn about 30 minutes into cook. should take 45 minutes or so.

A lotsa ways to do 'em! I tried the beer-butt method with pineapple renderings (using a mini-juice can)and was pleased with the results. Eggsperiment & have fun!!

I like'em marinated Chicken Island Thailand style. Also spatchcocked, indirect, with a bit-o-pecan smoke.
