I'm taking a boston butt to our tailgate party for the Redskins game tonight. A lot of others bringing other foods as well, so I picked up a 6-1/2 pounder. Decided that I needed it to be done shortly after noon or so and would put in cooler, take to the game, and pull on site. I put it on too early last night and it will be at 200° in another 30 to 60 minutes. I should have put on later and increased dome temp this morning to finish if necessary. Will be 7 or 8 hours between finishing and eating. Can it stay in a cooler in foil and towels that long, or do I need to pull now and reheat and put in cooler before taking to the game? Thanks

Gandolf,[p]Here is how I handle that long a period of time.......[p]Wrap the entire butt in foil. Then, place back in the EGG, BUT....choke out your fire in the EGG....close all the vents. Just let the butt sit there until you need it OR until the fire in the egg drops below 140º. Then you can wrap in blankets and place in coolers. [p]You will be amazed at the results....much more fat will render out leaving you VERY little inside fat.[p]I once cooked a butt for 22 hours with this procedure and I have done several since with GREAT results.[p]Stogie
