Tri-tip question

I have seen some good comments about this cut of meat, but haven't seen it in any of the local stores near me in the Houston area. I did see it at Central Market this past weekend for $9.75 per pound. I'm sure this is higher than average based on the quality of the store. What is a fair/average price and has anyone here locally found Tri-tip on a routine basis?

I've cooked 3 or 4 tri tips recently. If you buy from an HEB, you will get a select cut out on their counter, which in my opinion isnt worth the effort. However, if you get the butcher at Central Market to cut you a choice or prime piece, you are in for a treat. Tell him you want one with alot of marbeling. They asked me if i wanted the calif. or tx cut. Their Tx cut is the triangular shape with the fat cap on the bottom which is what i wanted. I think the trick here is to ask them to cut one for you....I paid the 9.75 price.

Try a large HEB.
I have been able to get them to cut it for me. You might need to talk to MGR of the meat department.
They don't always have full cuts of sirloin so you might have to place an order.
I also had them order a case of tri tip for me and I trimmed, seasoned and vacume packed. When thawed they were ready to cook. I just cooked my last two a few weeks ago and they tasted fresh after 6 months frozen. The price was less than $4.00 per pound. It was not prime beef, but the flavor was great.

Tri tip has become one my family's favorites. Costco usually sells them in pairs in $6-7 range. Also, if you have a Trader Joes, they usually carry them as well. I miss having a Trader Joes nearby....What's HEB?

mmmm tri-tip. .pretty cheap at the costco. ..t-rexed, then the key is to slice it across the grain, which is really against the 90% corner. .. .
and upping the anti with some sauted pancetta/shrooms/shallots .. ..good stuff -

Which Costo around DC carries tri-tips, Max? I've only seen them occasionally and they are always pre-marinated.

granted its been a few months since i last bought them, but i've seen them at the pentagon city costco, cryovaced 5 to a package, whole, not marinated in any way. ...

i like to simply dust em with some dizzy pig cowlick or raising the steaks....then t-rex them. ..i.e. sear them on both sides at 750+ for about 2 minutes per side, then pull them out, set the egg up indirect (put the plate setter in feet up with grid on top) at 400 degrees indirect and let them roast till they hit about 125 internal. ..takes about 20 more minutes or so. . .pull and let rest under foil for about 15 more minutes, then slice against the grain. .. gooood stuff .. .

ive just been using standard dp rubs lately, but the basting sauce is really nice with this cut and i use it everytime.

SoCal runs about 3.75 to 4.50 per pound for Choice or better
