12.34 lb Boston But

OK - - this will be the largest pulled pork cook I have done . . The cut is 12.34 pounds and boneless. At 250 (I hope) I am looking for thoughts of how long this beast should take to cook - - Going in to rub it down now.[p]Thanks -Bill

    FlaParrotHead,[p]WOW, you sure got a "big ol' butt"! I'd guess it's gonna take one and a half to one and three quarter hours per pound, but that's just a guess. I would be using some kind of thermometer and take it off at 195 degrees in the center.[p]How many you feedin' with that puppy anyway?[p]Smokey

    If it makes a difference, it is actually 2-6 1/2 butts together ....Do you think it would make a difference in the cooking time?[p]PS> ;) We're feeding 1.2 million people (all the Bucs fans awaiting the demise of the Carolina Panthers! )

    Having two butts will reduce the time, as opposed to one that size. I would start early, you can always wrap in foil and keep in a cooler. It will stay piping hot for a couple hours.
