Anyone have a recipe for Japanese Rice?

    Dave,[p]There are two ways to make it: in a pot or in a rice cooker. If you want to make it in the pot, you use about 1 1/4 cups of water per cup of rice; 3 cups of dry rice makes plenty for four people. The new style of Japanese rice does not need rinsing. Just boil the water, dump in the rice, boil it for 1 minute while stirring, and then turn the fire down as low as possible and cover the pot for 20 minutes. After 20 minutes, turn off the fire and let it sit there for another 10. Whatever you do, don't lift the pot lid until the end.[p]A rice cooker is a heck of a lot easier. Just dump the rice and the water in and turn it on. It'll be done in about a half-hour.

    I buy Japanese rice by the 20lb bag.It is always served at my house.It is true that the rice cooker is the easiest.In order to get good rice,you need to wash it and let is soak for a few hours.I usually let mine soak for 4-6 hours.If you do it in a pot,forget about the measuring cup,Add enough water to the rice,so that when you put your index finger into the rice,the water should be to the first knuckle on your finger.
    If you want variety to your rice instead of it just being steamed,you can add chicken broth to the water and cook it,you can add shrimp,crab,etc to the rice and cook it.It adds flavor to it.I have taken lobster tails that I cooked on the grill and added it to the rice along with some shrimp and a little sake.The rice was awesome.Let your imagination run wild.
