Roasted root veggies -- new experiment

No -- I don't have a camera... sorry.

Aiming at 1/2" squared x 2" lengths --

I chopped up 4 klondikes, 2 red beets, 4 skinny carrots, 1 vidalia onion [into half rings], 2 parsnips...

Seasoned with McCormack hand-grind Italian seasoning, sea salt & cracked pepper...

Tossed in OO...

Plopped in CI frying pan... then set two large tomatoes among the veggies...

Roasted @ 400F [in the pre-heated Egg, of course], indirect -- for 80 minutes.

Remove to serving platter, taste for seasoning, then lightly top off with finishing EVOO.

Oh, yum!

EDIT: What's "new" about this experiment? Addition of Italian seasoning and tomatoes...
