First camping trip with a small egg

Well, we're taking our small egg on it's first camping trip for a long weekend in the woods. We'll be cooking 2 of the 3 nights and will be serving pulled pork with all the trimmings one night and a spatchcock chicken with rice and veggies for the second meal. We did trial runs on the small last week and hopefully, have all the "egg"cessories accounted for. I sure hope we have nice fall (i.e. cool) weather to enjoy....![p]We'll post some pics when we get back....[p]Smokin' in the woods,

    Hope your weather is better than mine. I'd be glad to ship you some cool weather. It's been snowing for the past 2 days here in Sioux City, IA. The only good thing is that the ground is still too warm to stick around. But it won't be for long. Be warned all you people on the East coast. It's coming your way. [p]

    Actually I like the way its called Spatchcock, has a culinary sound to it LOL[p]Here is what a site talking about it says:[p]"Think of it as butterflying the chicken. The real term is to "spatchcock." Alan Davidson explains in The Oxford Companion to Food: "The theory is that the word is an abbreviation of 'dispatch the ****,' a phrase used to indicate a summary way of grilling a bird after splitting it open down the back and spreading the two halves out flat." Davidson speculates that spatchcocked birds originated in Ireland. He has noticed them in Irish cookbooks that date to the 18th century."[p]I was just wondering where the term originated, so now I know.[p]Happy eggin'
